For the Crust:
- 1 sheet puff pastry (thawed)
- 100g blue cheese (crumbled)
- 50g walnuts (toasted & chopped)
- 1 tbsp fresh thyme leaves
- 1 egg (beaten, for egg wash)
- 1 tbsp olive oil
- Salt & pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 200°C (400°F). Line a baking tray with parchment paper.
- Roll out puff pastry into a rectangle. Brush lightly with olive oil, leaving a 1-inch border.
- Sprinkle blue cheese, walnuts, thyme, salt, and pepper evenly over the pastry.
- Roll the pastry tightly from the long edge into a log. Slice into 1-inch thick rounds.
- Arrange slices spiral-side up on the baking tray. Brush with egg wash.
- Bake for 20-25 minutes until golden brown. Serve warm.
