For the Crust:
- 1 cup granulated sugar
- 1/4 cup water
- 4 large eggs
- 1 (14 oz) can sweetened condensed milk
- 1 (12 oz) can evaporated milk
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Place a muffin tin inside a larger baking dish.
- In a saucepan, melt sugar with water over medium heat until golden brown to make caramel. Quickly pour a spoonful into each muffin cup.
- In a blender, combine eggs, condensed milk, evaporated milk, vanilla, and salt. Blend until smooth.
- Pour the mixture over the caramel in each muffin cup. Fill the larger baking dish with hot water halfway up the sides of the muffin tin.
- Bake for 25-30 minutes until set. Let cool, then refrigerate for at least 2 hours.
- To serve, run a knife around the edges and invert onto plates.
