- 3 pounds beef short ribs
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
- 4 slices Gruyere cheese
- 4 slices French bread
Instructions
- Season short ribs with salt and pepper.
- In a large pot, heat olive oil and brown the short ribs on all sides.
- Remove ribs and add onions and garlic to the pot; cook until caramelized.
- Add beef broth, red wine, and thyme; return ribs to the pot.
- Cover and simmer on low heat for 2-3 hours until ribs are tender.
- Preheat oven to 350°F.
- Place bread slices on a baking sheet, top with Gruyere cheese, and bake until cheese melts.
- Serve ribs with the onion gravy and top with cheese toast.
Notes
For best results, use high-quality beef short ribs and let the dish rest before serving.
