- 1 pound pork shoulder or ground pork.
- 1 tablespoon fresh sage, minced.
- 1 tablespoon fresh thyme, minced.
- 1½ teaspoons red pepper flakes.
- 1½ teaspoons paprika.
- ¼ teaspoon nutmeg.
- 3 garlic cloves, grated.
- 1½ teaspoons brown sugar.
- 1½ teaspoons coarse salt.
- 1 teaspoon black pepper.
- 1 tablespoon cooking oil.
Instructions
- If using pork shoulder: cut into 1-inch chunks and chill for 15-20 minutes, then grind using a medium die.
- Mix all seasonings with ground pork: herbs, spices, garlic, sugar, salt and pepper.
- Cook a small test patty to adjust seasoning.
- Form into 2½-3 inch patties.
- Heat oil in a skillet over medium heat. Cook patties for 3-4 minutes each side. Serve hot.

Make up to 3 days ahead.
Freezes raw or cooked.
Can use dried herbs (half amount).
Great for meal prep.
Customize spices to taste.
