Homemade Sausage

Skip store-bought and make your own breakfast sausage patties with fresh herbs and perfect seasoning. Easy to customize and freezer-friendly.

Ingredients

  • 1 pound pork shoulder or ground pork.
  • 1 tablespoon fresh sage, minced.
  • 1 tablespoon fresh thyme, minced.
  • 1½ teaspoons red pepper flakes.
  • 1½ teaspoons paprika.
  • ¼ teaspoon nutmeg.
  • 3 garlic cloves, grated.
  • 1½ teaspoons brown sugar.
  • 1½ teaspoons coarse salt.
  • 1 teaspoon black pepper.
  • 1 tablespoon cooking oil.

Instructions

  1. If using pork shoulder: cut into 1-inch chunks and chill for 15-20 minutes, then grind using a medium die.
  2. Mix all seasonings with ground pork: herbs, spices, garlic, sugar, salt and pepper.
  3. Cook a small test patty to adjust seasoning.
  4. Form into 2½-3 inch patties.
  5. Heat oil in a skillet over medium heat. Cook patties for 3-4 minutes each side. Serve hot.

Notes

Make up to 3 days ahead.
Freezes raw or cooked.
Can use dried herbs (half amount).
Great for meal prep.
Customize spices to taste.
Can make into links with casings.
