Fresh Orchard Cheesecake

A creamy and light cheesecake topped with fresh orchard fruits, perfect for any occasion.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 cups mixed fresh orchard fruits (apples, pears, peaches)
  • 1 tablespoon lemon juice
  • 2 tablespoons honey

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C).
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  3. Beat cream cheese and 3/4 cup sugar until smooth. Add eggs one at a time, then vanilla and sour cream.
  4. Pour filling over crust. Bake for 45-50 minutes until center is set. Cool completely.
  5. Toss sliced fruits with lemon juice and honey. Arrange on top of cooled cheesecake before serving.

Notes

You can customize the seasonings to taste.
