For the Crust:
- 4 medium green tomatoes
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1 cup buttermilk
- 1 cup cornmeal
- 1/2 cup vegetable oil for frying
Instructions
1. Prepare the Crust:
- Slice tomatoes into 1/4-inch thick rounds. Discard the ends.
- In a shallow bowl, mix flour, salt, black pepper, paprika, and cayenne pepper.
- Dip tomato slices in buttermilk, then dredge in the flour mixture. Shake off excess.
- Heat oil in a large skillet over medium heat. Fry tomatoes in batches until golden brown, about 2-3 minutes per side.
- Drain on paper towels and serve warm.
