  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • For the Cheesecake Layer:
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium bowl, melt the butter and stir in sugar, eggs, and vanilla for the brownie layer.
  3. Add cocoa powder, flour, salt, and baking powder to the brownie mixture and mix until combined.
  4. Spoon the brownie batter into the muffin cups, filling each about halfway.
  5. In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth for the cheesecake layer.
  6. Top the brownie batter in each cup with the cheesecake mixture.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out with crumbs.
  8. Allow to cool completely before serving.
