Garlic Butter Steak and Potatoes Skillet

This easy one-pan recipe features perfectly seared steak and golden potatoes cooked in a flavorful garlic butter sauce.

Ingredients

  • 1 1/2 pounds New York strip steaks, cut into 1-inch pieces
  • 1 1/2 pounds baby yellow potatoes, diced
  • 2 tablespoons olive oil
  • 5 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • 2 teaspoons fresh thyme leaves
  • Kosher salt and freshly ground black pepper, to taste

Instructions

  1. In a large cast iron skillet over medium high heat, heat olive oil.
  2. Add steak and cook, flipping once, until desired doneness, about 4 minutes per side.
  3. Remove steak from skillet and set aside.
  4. Add potatoes to the skillet and cook until golden brown and tender.
  5. Stir in garlic, butter, and thyme; cook until fragrant.
  6. Return steak to the skillet and spoon the garlic butter over the steak and potatoes.
  7. Serve immediately.

Notes

For a spicier version, add red pepper flakes.
