- 1 1/2 pounds New York strip steaks, cut into 1-inch pieces
- 1 1/2 pounds baby yellow potatoes, diced
- 2 tablespoons olive oil
- 5 cloves garlic, minced
- 3 tablespoons unsalted butter
- 2 teaspoons fresh thyme leaves
- Kosher salt and freshly ground black pepper, to taste
Instructions
- In a large cast iron skillet over medium high heat, heat olive oil.
- Add steak and cook, flipping once, until desired doneness, about 4 minutes per side.
- Remove steak from skillet and set aside.
- Add potatoes to the skillet and cook until golden brown and tender.
- Stir in garlic, butter, and thyme; cook until fragrant.
- Return steak to the skillet and spoon the garlic butter over the steak and potatoes.
- Serve immediately.
Notes
For a spicier version, add red pepper flakes.
