For the Crust:
- 4 boneless, skinless chicken breasts
- 1.5 lbs baby potatoes, halved
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400Β°F (200Β°C).
- In a large bowl, combine olive oil, garlic, parmesan, oregano, basil, salt, and pepper.
- Add chicken and potatoes to the bowl, tossing to coat evenly.
- Transfer to a baking sheet, arranging chicken and potatoes in a single layer.
- Bake for 25-30 minutes until chicken is cooked through and potatoes are tender.
- Garnish with fresh parsley before serving.
