Garlic Parmesan Chicken and Potatoes

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400Β°F (200Β°C).
  2. In a large bowl, combine olive oil, garlic, parmesan, oregano, basil, salt, and pepper.
  3. Add chicken and potatoes to the bowl, tossing to coat evenly.
  4. Transfer to a baking sheet, arranging chicken and potatoes in a single layer.
  5. Bake for 25-30 minutes until chicken is cooked through and potatoes are tender.
  6. Garnish with fresh parsley before serving.
