Garlic Parmesan Chicken and Potatoes

A flavorful one-pan dish featuring tender chicken and crispy potatoes coated in garlic and Parmesan.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Lightly grease a large baking sheet.
  2. In a large bowl, combine olive oil, minced garlic, Parmesan, oregano, thyme, salt, and pepper.
  3. Add chicken and potatoes to the bowl, tossing to coat evenly with the mixture.
  4. Arrange chicken and potatoes in a single layer on the prepared baking sheet.
  5. Bake for 25-30 minutes until chicken is cooked through and potatoes are tender.
  6. Garnish with fresh parsley before serving.
