- 1 sheet frozen puff pastry, thawed
- 2 medium sweet potatoes, peeled and thinly sliced
- 4 ounces goat cheese, crumbled
- 8 ounces burrata cheese
- 1 tablespoon olive oil
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- 1 egg, beaten for egg wash
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss the sliced sweet potatoes with olive oil, salt, pepper, and thyme leaves. Roast for 15-20 minutes until tender.
- Roll out the puff pastry on a floured surface into a large circle.
- Arrange the roasted sweet potatoes in the center of the pastry, leaving a border. Crumble goat cheese over the top.
- Place the burrata in the center and fold the pastry edges over to form a wreath shape, sealing the edges.
- Brush the pastry with the beaten egg for a golden finish.
- Bake for 25-30 minutes until the pastry is puffed and golden brown.
- Let cool slightly before serving.
