Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 2 medium sweet potatoes, peeled and thinly sliced
  • 4 ounces goat cheese, crumbled
  • 8 ounces burrata cheese
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 1 egg, beaten for egg wash

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the sliced sweet potatoes with olive oil, salt, pepper, and thyme leaves. Roast for 15-20 minutes until tender.
  3. Roll out the puff pastry on a floured surface into a large circle.
  4. Arrange the roasted sweet potatoes in the center of the pastry, leaving a border. Crumble goat cheese over the top.
  5. Place the burrata in the center and fold the pastry edges over to form a wreath shape, sealing the edges.
  6. Brush the pastry with the beaten egg for a golden finish.
  7. Bake for 25-30 minutes until the pastry is puffed and golden brown.
  8. Let cool slightly before serving.
