Gooey Caramel Apple Buttermilk Muffins

Deliciously moist muffins filled with caramel and fresh apples, perfect for breakfast or dessert.

For the Crust:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 1/2 cups diced apples
  • 1/2 cup caramel sauce

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, cream butter and brown sugar until light. Beat in eggs and vanilla.
  4. Alternately add the dry ingredients and buttermilk to the butter mixture, mixing until just combined.
  5. Fold in diced apples. Fill muffin cups halfway, add a teaspoon of caramel sauce, then top with more batter.
  6. Bake for 18-20 minutes until golden. Drizzle with extra caramel while warm.

Notes

You can customize the seasonings to taste.
