Gooey Mashed Potato Cheese Puffs

These gooey mashed potato cheese puffs are crispy on the outside and creamy inside, made with simple ingredients for a comforting snack or side dish.

Ingredients

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: Chopped chives for garnish

Instructions

  1. In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, egg, flour, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  2. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Scoop out tablespoon-sized portions of the mixture and roll them into balls. Place them on the prepared baking sheet.
  4. Bake for 20-25 minutes, or until the puffs are golden brown and crispy on the outside.
  5. Remove from the oven and let cool slightly before serving. Garnish with chopped chives if desired.

Notes

For extra gooeyness, use freshly mashed potatoes. These can be stored in an airtight container in the fridge for up to 3 days and reheated in the oven.
