Gooey Raspberry Chocolate Chunk Cookies

Soft, chewy cookies with bursts of raspberry and melty chocolate chunks.

For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup fresh raspberries, halved
  • 1 cup dark chocolate chunks

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375Β°F (190Β°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and sugars until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  3. Whisk together flour, baking soda, and salt in a separate bowl. Gradually add to the wet ingredients, mixing until just combined.
  4. Gently fold in raspberries and chocolate chunks.
  5. Drop tablespoon-sized dough portions onto prepared baking sheets, spacing 2 inches apart.
  6. Bake for 10-12 minutes until edges are golden but centers remain soft. Cool on baking sheets for 5 minutes before transferring to wire racks.

Notes

You can customize the seasonings to taste.
