- 4 large bell peppers, hollowed out and carved for Halloween faces
- 2 cups cooked shredded chicken
- 1 cup cooked rice
- 1/2 cup shredded cheddar cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix the shredded chicken, cooked rice, diced onion, minced garlic, chili powder, salt, and pepper.
- Stuff the mixture into the hollowed bell peppers.
- Place the stuffed peppers in a baking dish and top with shredded cheese.
- Bake for 25-30 minutes, or until the peppers are tender and the cheese is melted.
Notes
For a festive touch, carve jack-o’-lantern faces on the peppers before stuffing.
