Halloween Shredded Chicken & Rice Stuffed Peppers

Spooky bell peppers stuffed with shredded chicken, rice, and festive flavors for a Halloween meal.

Ingredients

  • 4 large bell peppers, hollowed out and carved for Halloween faces
  • 2 cups cooked shredded chicken
  • 1 cup cooked rice
  • 1/2 cup shredded cheddar cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix the shredded chicken, cooked rice, diced onion, minced garlic, chili powder, salt, and pepper.
  3. Stuff the mixture into the hollowed bell peppers.
  4. Place the stuffed peppers in a baking dish and top with shredded cheese.
  5. Bake for 25-30 minutes, or until the peppers are tender and the cheese is melted.

Notes

For a festive touch, carve jack-o’-lantern faces on the peppers before stuffing.
