Ingredients

- 12 slices deli ham.
- 12 eggs.
- ½ cup mozzarella cheese.
- Salt and pepper to taste.
- Green onions, chopped.
Instructions
- Heat oven to 375°F. Lightly grease a 12-cup muffin tin.
- Place ham slices into muffin cups to form shells.
- Divide mozzarella between cups, sprinkle over ham. Crack one egg into each cup.
- Add salt and pepper to taste over eggs.
- Cook for 15-18 minutes until eggs are set.
- Top with chopped green onions and serve.
Notes
Can be made ahead for meal prep.
Great for low-carb diets.
