Ingredients

- 2 tablespoons olive oil.
- 1 medium yellow onion, chopped.
- 2 carrots, chopped.
- 2 celery stalks, chopped.
- 4 garlic cloves, minced.
- 1 teaspoon dried thyme.
- 6 cups chicken broth.
- 2 bay leaves.
- 1/2 teaspoon black pepper.
- 4 cans white beans, drained.
- 2 cups pulled ham.
- 1/2 teaspoon salt.
Instructions
- Cook onion, carrots, celery in oil until tender, 8-10 minutes.
- Add garlic and thyme, cook 1 minute until fragrant.
- Add broth, bay leaves, pepper. Boil then simmer 5-10 minutes.
- Add beans and ham. Simmer 10-15 minutes until hot.
Notes
Can thicken with flour or blending.
Use any type of broth.
