Hawaiian Carrot Pineapple Cake

A tropical twist on classic carrot cake with the addition of sweet pineapple for a moist and flavorful dessert.

For the Crust:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/2 cup chopped walnuts

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, beat together granulated sugar, brown sugar, eggs, oil, and vanilla until smooth.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in grated carrots, crushed pineapple, coconut, and walnuts.
  6. Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  7. Let cool completely before frosting or serving.

Notes

You can customize the seasonings to taste.
