For the Crust:
- 2 cups cooked quinoa
- 2 cups cooked chicken, shredded
- 1 cup fresh pineapple, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1/4 cup plain Greek yogurt
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Prepare the Crust:
- In a large bowl, combine quinoa, shredded chicken, pineapple, red bell pepper, red onion, and cilantro.
- In a small bowl, whisk together Greek yogurt, lime juice, honey, salt, and black pepper.
- Pour the dressing over the quinoa mixture and toss gently to combine.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
- Serve chilled and enjoy.
