Hawaiian Pineapple Chicken and Rice

For the Crust:

  • 2 boneless, skinless chicken breasts, cubed
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup white rice, uncooked
  • 2 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon black pepper
  • 2 green onions, sliced (for garnish)

Instructions

1. Prepare the Crust:

  1. Heat vegetable oil in a large skillet over medium heat. Add cubed chicken and cook until browned, about 5-6 minutes.
  2. In the same skillet, add pineapple chunks, soy sauce, brown sugar, garlic powder, ginger powder, and black pepper. Stir well to combine.
  3. Add uncooked rice and chicken broth to the skillet. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until rice is tender and liquid is absorbed.
  4. Fluff the rice with a fork, garnish with sliced green onions, and serve warm.
