For the Crust:
- 2 boneless, skinless chicken breasts, cubed
- 1 cup pineapple chunks (fresh or canned)
- 1 cup white rice, uncooked
- 2 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 1 tablespoon vegetable oil
- 1/2 teaspoon black pepper
- 2 green onions, sliced (for garnish)
Instructions
1. Prepare the Crust:
- Heat vegetable oil in a large skillet over medium heat. Add cubed chicken and cook until browned, about 5-6 minutes.
- In the same skillet, add pineapple chunks, soy sauce, brown sugar, garlic powder, ginger powder, and black pepper. Stir well to combine.
- Add uncooked rice and chicken broth to the skillet. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until rice is tender and liquid is absorbed.
- Fluff the rice with a fork, garnish with sliced green onions, and serve warm.
