For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 can (20 oz) crushed pineapple, drained
- 1/2 cup shredded coconut
- 1/4 cup brown sugar
- 1 tsp vanilla extract
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/4 cup heavy cream
- 1/2 tsp coconut extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F (175Β°C). Line an 8Γ8-inch baking pan with parchment paper.
- In a bowl, mix flour and granulated sugar. Cut in cold butter until mixture resembles coarse crumbs.
- Press the mixture firmly into the prepared pan. Bake for 15 minutes or until lightly golden.
- In another bowl, combine drained pineapple, shredded coconut, brown sugar, and vanilla. Spread over the baked crust.
- Bake for another 15 minutes. Let cool completely.
- For the frosting, beat cream cheese, powdered sugar, heavy cream, and coconut extract until smooth. Spread over cooled bars.
- Chill for at least 1 hour before slicing into squares.
