Hawaiian Pineapple Coconut Bars with Creamy Frosting

Delicious tropical bars with a buttery crust, sweet pineapple filling, and creamy coconut frosting.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 can (20 oz) crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup heavy cream
  • 1/2 tsp coconut extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C). Line an 8Γ—8-inch baking pan with parchment paper.
  2. In a bowl, mix flour and granulated sugar. Cut in cold butter until mixture resembles coarse crumbs.
  3. Press the mixture firmly into the prepared pan. Bake for 15 minutes or until lightly golden.
  4. In another bowl, combine drained pineapple, shredded coconut, brown sugar, and vanilla. Spread over the baked crust.
  5. Bake for another 15 minutes. Let cool completely.
  6. For the frosting, beat cream cheese, powdered sugar, heavy cream, and coconut extract until smooth. Spread over cooled bars.
  7. Chill for at least 1 hour before slicing into squares.

Notes

You can customize the seasonings to taste.
