- 2 lbs beef chuck, cubed
- 1 can coconut milk
- 3 carrots, sliced
- 2 bell peppers, diced
- 4 potatoes, chopped
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium heat.
- Add beef and brown on all sides.
- Add onions and garlic; cook until softened.
- Stir in coconut milk, carrots, peppers, and potatoes.
- Bring to a boil, then simmer for 1-2 hours until beef is tender.
- Season with salt and pepper before serving.
Notes
For a spicier version, add chili flakes.
