For the Crust:
- 2 cups grated carrots
- 1 cup grated apple
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 tsp baking soda
- 1/2 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F (175Β°C). Grease a 9-inch round cake pan.
- In a large bowl, whisk together flour, sugar, cinnamon, nutmeg, baking soda, and salt.
- In another bowl, mix oil, eggs, and vanilla. Stir in grated carrots and apple.
- Combine wet and dry ingredients until just blended. Pour batter into prepared pan.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Let cool in pan for 10 minutes before transferring to a wire rack.
