Heavenly Carrot Apple Cake

A moist and flavorful cake combining the sweetness of carrots and apples with warm spices.

For the Crust:

  • 2 cups grated carrots
  • 1 cup grated apple
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C). Grease a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, sugar, cinnamon, nutmeg, baking soda, and salt.
  3. In another bowl, mix oil, eggs, and vanilla. Stir in grated carrots and apple.
  4. Combine wet and dry ingredients until just blended. Pour batter into prepared pan.
  5. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  6. Let cool in pan for 10 minutes before transferring to a wire rack.
