Heavenly Cherry Cupcakes

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup cherry puree
  • 1/2 cup fresh cherries, pitted and chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract and cherry puree.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients, alternating with milk.
  6. Fold in chopped cherries.
  7. Divide batter evenly among cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Let cupcakes cool completely before frosting.
