For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp melted butter
- 16 oz cream cheese, softened
- 1/2 cup sour cream
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups fresh strawberries, diced
- 1 tbsp lemon juice
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Line an 8×8 baking pan with parchment paper.
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the prepared pan.
- Beat cream cheese, sour cream, and 3/4 cup sugar until smooth. Add eggs one at a time, then vanilla.
- Pour cheesecake mixture over crust. Bake for 30 minutes or until set. Cool completely.
- Toss strawberries with lemon juice. Let sit for 10 minutes, then drain excess liquid.
- Whip heavy cream and powdered sugar until stiff peaks form. Spread over cooled cheesecake.
- Top with strawberries. Chill for at least 2 hours before cutting into bars.
