Heavenly Strawberry Shortcake Cheesecake Bars

A delightful fusion of strawberry shortcake and creamy cheesecake in bar form.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sour cream
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh strawberries, diced
  • 1 tbsp lemon juice
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Line an 8×8 baking pan with parchment paper.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the prepared pan.
  3. Beat cream cheese, sour cream, and 3/4 cup sugar until smooth. Add eggs one at a time, then vanilla.
  4. Pour cheesecake mixture over crust. Bake for 30 minutes or until set. Cool completely.
  5. Toss strawberries with lemon juice. Let sit for 10 minutes, then drain excess liquid.
  6. Whip heavy cream and powdered sugar until stiff peaks form. Spread over cooled cheesecake.
  7. Top with strawberries. Chill for at least 2 hours before cutting into bars.

Notes

You can customize the seasonings to taste.
