Heavenly Strawberry Shortcake Cheesecake Bars

A delightful fusion of strawberry shortcake and creamy cheesecake in bar form, perfect for any occasion.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced
  • 1 cup whipped cream
  • 1/4 cup strawberry jam

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C). Line an 8Γ—8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of the prepared pan.
  3. In another bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then vanilla, mixing well.
  4. Pour cheesecake mixture over the crust. Bake for 25-30 minutes until set. Let cool completely.
  5. Spread strawberry jam over the cooled cheesecake layer. Top with diced strawberries and whipped cream.
  6. Chill for at least 2 hours before slicing into bars.

Notes

You can customize the seasonings to taste.
