- 4 medium potatoes, cut into wedges
- 2 chicken breasts, sliced
- 1 cup mushrooms, sliced
- 1 bell pepper, sliced
- 2 tablespoons olive oil
- 1 tablespoon dried herbs (such as thyme and rosemary)

Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the potato wedges with 1 tablespoon of olive oil, herbs, salt, and pepper.
- On a large sheet pan, arrange the potato wedges, sliced chicken breasts, mushrooms, and bell pepper.
- Drizzle the remaining olive oil over the ingredients and season with additional salt and pepper if needed.
- Roast in the preheated oven for 25 minutes, then stir the ingredients and roast for another 15-20 minutes until everything is golden and cooked through.
Notes
For extra flavor, marinate the chicken for 30 minutes before roasting. Serve with a fresh salad or garlic bread.
