- 8 ounces cream cheese, softened
- 1/4 cup prepared basil pesto
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil
- Salt and pepper to taste
- 1/2 cup chopped nuts for rolling (optional)
Instructions
- In a large bowl, beat the cream cheese until smooth.
- Stir in the pesto, sun-dried tomatoes, Parmesan cheese, and fresh basil until well combined.
- Season with salt and pepper to taste.
- Shape the mixture into a log on a piece of plastic wrap.
- Roll the log in chopped nuts if desired, then wrap tightly and refrigerate for at least 2 hours to firm up.
- Serve with crackers or sliced vegetables.
Notes
For a spicier version, add crushed red pepper flakes to the mixture. Store leftovers in an airtight container in the refrigerator for up to 3 days.
