Holiday Luck Bowl

Ingredients

  • 2 cups fresh spinach
  • 1 ripe apple, sliced
  • 1/2 cup walnuts, chopped
  • 1/4 cup feta cheese, crumbled
  • Dressing: 2 tablespoons olive oil
  • Dressing: 1 tablespoon balsamic vinegar
  • Dressing: Salt and pepper to taste

Instructions

  1. Wash and dry the spinach, then place it in a large bowl.
  2. Slice the apple and add it to the bowl along with the walnuts and feta cheese.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper to make the dressing.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Serve immediately for the best flavor.

Notes

For a vegan version, omit the feta cheese or substitute with a plant-based alternative. Store leftovers in the refrigerator for up to 2 days.
