Homemade Baked Cottage Cheese Eggs

For the Crust:

  • 6 large eggs
  • 1 cup cottage cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 tablespoon chopped fresh chives

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375Β°F (190Β°C) and lightly grease a baking dish.
  2. In a large bowl, whisk the eggs until well beaten.
  3. Stir in cottage cheese, Parmesan cheese, salt, pepper, garlic powder, and onion powder until combined.
  4. Pour the mixture into the prepared baking dish.
  5. Bake for 25-30 minutes or until the eggs are set and the top is lightly golden.
  6. Garnish with fresh chives before serving.
