Homemade Lemon Blueberry Bars

A tangy and sweet dessert with a buttery crust, zesty lemon filling, and fresh blueberries.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 cup fresh blueberries

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. In a bowl, mix 1 1/2 cups flour, 1/2 cup sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Press into the prepared pan to form the crust.
  3. Bake crust for 15 minutes until lightly golden.
  4. In another bowl, whisk eggs, 1 cup sugar, lemon juice, and lemon zest. Stir in 1/4 cup flour and baking powder until smooth. Fold in blueberries.
  5. Pour filling over the baked crust. Bake for 25-30 minutes until set.
  6. Let cool completely before cutting into bars.

Notes

You can customize the seasonings to taste.
