For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup fresh lemon juice
- 2 tablespoons lemon zest
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 cup fresh blueberries
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
- In a bowl, mix 1 1/2 cups flour, 1/2 cup sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Press into the prepared pan to form the crust.
- Bake crust for 15 minutes until lightly golden.
- In another bowl, whisk eggs, 1 cup sugar, lemon juice, and lemon zest. Stir in 1/4 cup flour and baking powder until smooth. Fold in blueberries.
- Pour filling over the baked crust. Bake for 25-30 minutes until set.
- Let cool completely before cutting into bars.
