For the Crust:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon poppy seeds

- 1/2 cup milk
- 2 tablespoons unsalted butter, melted
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- 1 cup water
- 1/2 cup brown sugar
- 1 tablespoon lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9-inch baking dish.
- In a bowl, whisk together flour, granulated sugar, poppy seeds, baking powder, and salt.
- Stir in milk, melted butter, lemon zest, lemon juice, and vanilla extract until just combined. Pour batter into the prepared dish.
- In a small saucepan, heat water, brown sugar, and lemon juice until sugar dissolves. Pour evenly over the batter.
- Bake for 30-35 minutes, until the top is golden and the pudding layer is set.
- Let cool slightly before serving. Serve warm or at room temperature.
