For the Crust:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 2 tablespoons poppy seeds
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1 cup water
- 1/2 cup granulated sugar (for pudding layer)
- 1/4 cup lemon juice (for pudding layer)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease an 8-inch square baking dish.
- In a bowl, whisk together flour, sugar, poppy seeds, baking powder, and salt.
- Stir in milk, melted butter, vanilla extract, lemon zest, and lemon juice until just combined. Pour batter into the prepared baking dish.
- In a small saucepan, bring water, sugar, and lemon juice to a boil. Carefully pour this mixture over the batter in the baking dish.
- Bake for 30 minutes or until the top is golden and the pudding layer is set. Let cool slightly before serving.
