Homemade Peppermint Patties

Ingredients

  • 2 1/2 cups confectioners' sugar
  • 1 1/2 tablespoons light corn syrup
  • 1 1/2 tablespoons water
  • 1/2 teaspoon peppermint extract
  • 1 tablespoon shortening
  • 2 cups semisweet chocolate chips

Instructions

  1. In a large bowl, mix together the confectioners' sugar, corn syrup, water, and peppermint extract until a dough forms.
  2. Knead the dough on a surface dusted with confectioners' sugar until smooth.
  3. Roll the dough into 1-inch balls and flatten them into patties.
  4. Place the patties on a baking sheet lined with parchment paper and refrigerate for 30 minutes.
  5. Melt the shortening and chocolate chips in a microwave-safe bowl, stirring every 30 seconds.
  6. Dip each patty into the melted chocolate, coating completely, and place back on the baking sheet.
  7. Refrigerate until the chocolate sets, about 1 hour.

Notes

For best results, ensure the patties are fully chilled before dipping in chocolate. Store in an airtight container in the refrigerator.
