- 1. Preheat the oven to 400°F (200°C).
- 2. Place the acorn squash halves cut-side up on a baking sheet.
- 3. Drizzle the squash with olive oil and honey, then season with salt and pepper.
- 4. Roast in the preheated oven for 40-45 minutes, or until the squash is tender.
- 5. While the squash is roasting, prepare the cranberry drizzle: In a small saucepan, combine cranberries, water, and sugar. Bring to a simmer and cook for 10 minutes until thickened.
- 6. Remove the squash from the oven and top with crumbled goat cheese.
- 7. Drizzle the cranberry sauce over the squash and serve immediately.
Notes
For a vegan version, substitute goat cheese with a plant-based alternative. Ensure cranberries are fresh for the best flavor.
