For the Crust:
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1/4 cup honey
- 2 jalapeños, sliced (seeds removed for less heat)
- 1 cup sliced peaches (fresh or canned)
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lime juice
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and smoked paprika.
- Add chicken to the skillet and cook for 6-7 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add garlic and jalapeños. Sauté for 1-2 minutes until fragrant.
- Stir in honey, peaches, and lime juice. Cook for 3-4 minutes until sauce thickens slightly.
- Return chicken to the skillet, spooning the sauce over it. Simmer for 2-3 minutes to combine flavors.
- Garnish with fresh cilantro before serving.
