For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks (fresh or canned)
- 3 tablespoons honey
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon minced garlic
- 1/2 teaspoon ground ginger
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken breasts with salt and pepper, then cook in the skillet for 5-6 minutes per side until golden brown.
- In a small bowl, whisk together honey, soy sauce, garlic, and ginger.
- Add pineapple chunks to the skillet, then pour the honey mixture over the chicken and pineapple.
- Reduce heat to medium and simmer for 5-7 minutes, until the sauce thickens and the chicken is fully cooked.
