Hot Cocoa Cookies

Soft chocolate cookies with gooey marshmallows and chocolate glaze that taste like your favorite winter drink in cookie form.

Ingredients

  • 1/2 cup unsalted butter, cubed.
  • 1 1/2 cups semi-sweet chocolate, chopped.
  • 1 1/2 cups all-purpose flour.
  • 1/4 cup unsweetened cocoa powder.
  • 1 1/2 teaspoons baking powder.
  • 1/4 teaspoon salt.
  • 1 1/4 cups brown sugar.
  • 3 large eggs.
  • 1 1/2 teaspoons vanilla.
  • 12 large marshmallows, halved.
  • Chocolate Icing:.
  • 1 cup powdered sugar.
  • 2 tablespoons unsalted butter, melted.
  • 2 tablespoons unsweetened cocoa powder.
  • 2 tablespoons hot water.
  • 1/4 teaspoon vanilla.
  • Sprinkles for decoration.

Instructions

  1. Melt butter and chocolate in microwave, cool 15 minutes.
  2. Whisk together flour, cocoa, baking powder, and salt.
  3. Beat sugar, eggs, vanilla, then mix in cooled chocolate.
  4. Add flour mixture in 2 batches until combined.
  5. Chill dough 1 hour minimum.
  6. Form tablespoon-sized balls, bake at 325°F for 10-12 minutes.
  7. Add marshmallow halves, bake 3 more minutes.
  8. Cool completely, top with chocolate icing and sprinkles.
  9. Let icing set 30-60 minutes before serving.

Notes

Dough will be sticky like brownies.
Chill at least 1 hour.
Add marshmallows face down.
Ice cookies while on cooling rack.
