- 1/2 cup unsalted butter, cubed.
- 1 1/2 cups semi-sweet chocolate, chopped.
- 1 1/2 cups all-purpose flour.
- 1/4 cup unsweetened cocoa powder.
- 1 1/2 teaspoons baking powder.
- 1/4 teaspoon salt.
- 1 1/4 cups brown sugar.
- 3 large eggs.
- 1 1/2 teaspoons vanilla.
- 12 large marshmallows, halved.
- Chocolate Icing:.
- 1 cup powdered sugar.
- 2 tablespoons unsalted butter, melted.
- 2 tablespoons unsweetened cocoa powder.
- 2 tablespoons hot water.
- 1/4 teaspoon vanilla.
- Sprinkles for decoration.
Instructions
- Melt butter and chocolate in microwave, cool 15 minutes.
- Whisk together flour, cocoa, baking powder, and salt.
- Beat sugar, eggs, vanilla, then mix in cooled chocolate.
- Add flour mixture in 2 batches until combined.
- Chill dough 1 hour minimum.
- Form tablespoon-sized balls, bake at 325°F for 10-12 minutes.
- Add marshmallow halves, bake 3 more minutes.
- Cool completely, top with chocolate icing and sprinkles.
- Let icing set 30-60 minutes before serving.
Notes
Dough will be sticky like brownies.
Chill at least 1 hour.
Add marshmallows face down.
Ice cookies while on cooling rack.
