Grandma’s Southern Sweet Potato Cobbler

Ingredients

  • 4 large sweet potatoes, peeled and sliced
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • For the topping: 1/2 cup brown sugar, 1/2 cup oats

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, mix sliced sweet potatoes, granulated sugar, melted butter, cinnamon, nutmeg, and salt until well combined.
  3. Spread the sweet potato mixture evenly in the prepared baking dish.
  4. In another bowl, whisk together flour, milk, and vanilla extract to make the batter.
  5. Pour the batter over the sweet potato mixture.
  6. In a small bowl, combine brown sugar and oats for the topping and sprinkle over the top.
  7. Bake for 45-50 minutes, or until golden and bubbly.
  8. Allow to cool for 10 minutes before serving.

Notes

Serve warm with a scoop of vanilla ice cream for the best flavor.
