- 4 large sweet potatoes, peeled and sliced
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1 cup milk
- 1 teaspoon vanilla extract
- For the topping: 1/2 cup brown sugar, 1/2 cup oats
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a large bowl, mix sliced sweet potatoes, granulated sugar, melted butter, cinnamon, nutmeg, and salt until well combined.
- Spread the sweet potato mixture evenly in the prepared baking dish.
- In another bowl, whisk together flour, milk, and vanilla extract to make the batter.
- Pour the batter over the sweet potato mixture.
- In a small bowl, combine brown sugar and oats for the topping and sprinkle over the top.
- Bake for 45-50 minutes, or until golden and bubbly.
- Allow to cool for 10 minutes before serving.
Notes
Serve warm with a scoop of vanilla ice cream for the best flavor.
