Jalapeño Cornbread Muffins with Cream Cheese Filling

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder

  • 1 cup milk

  • 2 jalapeños, finely chopped
  • 4 ounces cream cheese, softened

Instructions

  1. Preheat oven to 375°F and grease a muffin tin.
  2. In a large bowl, mix cornmeal, flour, baking powder, and salt.
  3. In another bowl, whisk together milk, oil, and egg.
  4. Combine wet and dry ingredients, then fold in chopped jalapeños.
  5. Spoon half the batter into muffin cups, add a dollop of cream cheese, then top with remaining batter.
  6. Bake for 20-25 minutes or until golden brown.

Notes

For a less spicy version, remove the seeds from the jalapeños before chopping.
