- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 2 jalapeños, finely chopped
- 4 ounces cream cheese, softened
Instructions
- Preheat oven to 375°F and grease a muffin tin.
- In a large bowl, mix cornmeal, flour, baking powder, and salt.
- In another bowl, whisk together milk, oil, and egg.
- Combine wet and dry ingredients, then fold in chopped jalapeños.
- Spoon half the batter into muffin cups, add a dollop of cream cheese, then top with remaining batter.
- Bake for 20-25 minutes or until golden brown.
Notes
For a less spicy version, remove the seeds from the jalapeños before chopping.
