Juicy Pineapple Cake

A moist and flavorful pineapple cake with a tropical twist, perfect for any occasion.

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup crushed pineapple, drained
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup pineapple juice
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Alternately add the dry ingredients and pineapple juice to the butter mixture, mixing well after each addition.
  6. Fold in the crushed pineapple until evenly distributed.
  7. Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  8. Allow cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
