Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 can (20 oz) crushed pineapple, drained
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix together the flour, sugar, baking soda, and salt.
  3. Add the crushed pineapple, vegetable oil, eggs, and vanilla extract to the dry ingredients and stir until well combined.
  4. Pour the batter into the prepared pan and smooth the top.
  5. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow the cake to cool completely before serving.

Notes

For a juicier cake, reserve some pineapple juice and add it to the batter. Store leftovers in an airtight container.
