Laura Bush’s Cowboy Cookies

  • 1 tablespoon baking powder

  • 1 1/2 cups granulated sugar
  • 1 1/2 cups packed light-brown sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 3 cups semisweet chocolate chips
  • 3 cups old-fashioned rolled oats
  • 2 cups sweetened flake coconut
  • 2 cups chopped pecans

Instructions

  1. Preheat oven to 350°F.
  2. Mix flour, baking powder, baking soda, cinnamon, and salt in a bowl.
  3. In a separate bowl, beat butter and sugars until creamy.
  4. Add eggs and vanilla extract; beat well.
  5. Gradually add the flour mixture to the butter mixture and stir until combined.
  6. Stir in chocolate chips, oats, coconut, and pecans.
  7. Drop dough by rounded tablespoonfuls onto ungreased baking sheets.
  8. Bake for 10-12 minutes or until golden brown.
  9. Cool on wire racks.
