- 1 1/2 cups graham cracker crumbs

Instructions
- Preheat oven to 325°F and prepare a baking pan.
- Mix graham cracker crumbs and melted butter; press into the bottom of the pan to form the crust.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, then stir in vanilla and sour cream.
- Pour the filling over the crust and bake for 45-50 minutes until set.
- Cool completely, then layer with pomegranate seeds and garnish with fresh mint.
