Ham Noodle Casserole

Creamy casserole with ham, noodles and veggies in cheesy sauce. Perfect for using leftover ham.

Ingredients

  • 8 ounces egg noodles.
  • 3 cups chopped cooked ham.
  • 12 ounces frozen mixed vegetables.
  • 10.5 ounces cream of chicken soup.
  • 1 cup sour cream.
  • 1/3 cup milk.
  • 1 teaspoon dried thyme.
  • 1 teaspoon dried parsley.
  • 1/4 teaspoon salt.
  • 1/2 teaspoon pepper.
  • 1/3 cup Parmesan cheese.
  • 2 cups mozzarella cheese.

Instructions

  1. Cook noodles in salted water. Thaw vegetables.
  2. Combine soup, sour cream, milk, seasonings and most cheese.
  3. Mix in ham, vegetables and drained noodles.
  4. Pour in dish, top with remaining cheese. Bake at 350°F for 25-30 minutes.

Notes

Great use for leftover ham.
Can be made ahead.
