Lemon Bars

Classic lemon bars featuring a buttery shortbread crust topped with a bright, tangy lemon filling and dusted with powdered sugar.

Ingredients

  • All-purpose flour for crust (1 cup).
  • Powdered sugar (1/3 cup plus more for dusting).
  • Sea salt (1/4 teaspoon).
  • Unsalted butter, melted (1/2 cup).
  • Vanilla extract (1/2 teaspoon).
  • Granulated sugar (1 cup).
  • Lemon zest (1 tablespoon, optional).
  • All-purpose flour for filling (1/4 cup).
  • Large eggs (4).
  • Fresh lemon juice (1/2 cup).

Instructions

  1. Heat oven to 350°F. Line pan with parchment paper.
  2. Mix flour, sugar, salt, butter and vanilla. Press into pan.
  3. Cook 18-20 minutes until edges brown, then dock with fork.
  4. Mix sugar with zest, add flour, eggs and lemon juice.
  5. Pour filling over hot crust, bake 20-25 minutes until set.
  6. Cool 1 hour at room temp, then chill 2 hours in fridge.

Notes

Let chill completely before cutting.
Dust with powdered sugar before serving.
Can make ahead.
