Lemon Basil Salmon Rolls

Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix lemon juice, lemon zest, chopped basil, minced garlic, salt, and pepper.
  3. Brush the salmon fillets with olive oil and spread the lemon-basil mixture evenly over each fillet.
  4. Roll each salmon fillet tightly and secure with toothpicks.
  5. Place the rolls in a baking dish and bake for 15-20 minutes, or until the salmon is cooked through.
  6. Remove from the oven and let rest for 5 minutes before serving.

Notes

For a crispier texture, broil the rolls for the last 2 minutes. Pair with a side salad for a complete meal.
