  • For the crust: 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • For the filling: 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries

Instructions

  1. Step 1: Preheat the oven to 325°F (163°C) and line an 8×8 inch baking pan with parchment paper.
  2. Step 2: In a medium bowl, mix the graham cracker crumbs, melted butter, and 1/4 cup sugar until combined. Press the mixture into the bottom of the prepared pan.
  3. Step 3: Bake the crust for 10 minutes, then remove and let cool slightly.
  4. Step 4: In a large bowl, beat the cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well after each addition.
  5. Step 5: Stir in the sour cream, lemon juice, and lemon zest until fully incorporated.
  6. Step 6: Gently fold in the blueberries, then pour the filling over the cooled crust.
  7. Step 7: Bake for 35-40 minutes, or until the center is set. Let cool to room temperature, then refrigerate for at least 2 hours before slicing into bars.

Notes

For best results, use fresh blueberries and chill the bars overnight. Store in an airtight container in the refrigerator for up to 5 days.
