Lemon Coconut Cheesecake Cookies

Soft and chewy cookies with a delightful combination of lemon, coconut, and creamy cheesecake flavor.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup shredded coconut
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour and shredded coconut. Set aside.
  3. In another bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add egg, vanilla extract, lemon zest, and lemon juice to the butter mixture. Mix well.
  5. Gradually add the flour and coconut mixture to the wet ingredients, stirring until combined.
  6. In a separate bowl, beat cream cheese and powdered sugar until smooth.
  7. Drop tablespoon-sized portions of cookie dough onto the baking sheet. Make a small indentation in the center of each cookie and fill with a teaspoon of the cream cheese mixture.
  8. Bake for 12-15 minutes or until edges are lightly golden. Let cool before serving.
