Lemon Coconut Heaven Cookies

Delightfully tangy and sweet cookies with a perfect balance of lemon zest and shredded coconut.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup shredded coconut
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together butter and sugar until light and fluffy. Add egg, lemon zest, and lemon juice, mixing well.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until combined.
  4. Fold in shredded coconut until evenly distributed.
  5. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart.
  6. Bake for 12-15 minutes or until edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
